Lesson Overview

Bread represents a major source of food for many people around the world. In this lesson students will learn that quick breads are breads which mix easily and bake quickly.Banana Muffins are one example of Quick Breads. Using the computer students found different recipes for Banana Muffins and what nutrients are provided by bread and bananas.

  1. Teacher will welcome class and take roll. Pretest will be on
    What do you know about quick breads? What do you know about bananas?
    What are the terms for batter, shortening, and leavening agent?


  2. Teacher will use transparencies to show Facts About Bananas and How to to Select, Ripen, and Store Bananas.
  3. Students will use the computer to find two different recipes for Banana Muffins.
  4. Teacher will introduce chapter 24. The teacher will tell the students the secret to making delicious quick breads with good texture, is to follow the recipe instructions carefully.
    Banana Muffins are one example of quick breads.
  5. The teacher, using the transparency, will discuss with the students the methods of mixing quick breads. Students will identify the products made by each method.
  6. Teacher will assign students to their kitchen in groups of 3-4. Students will prepare recipe for Bananas Muffins and clean up their kitchen.
  7. While muffins are baking, students will read Chapter 24: Quick Breads.
    Students are to prepare a chart of the important steps in making good quick bread. Students will include key words and a simple illustration for each step.
  8. Each group of students will sample the different muffins. Students will evalutate which group of students produced the ideal product. Students will record their evaluations on the Product Evaluation Rubric. Based on appearance, color, flavor, and texture.

Assessment
Performance Assessment on students while they are preparing Banana Muffins. Did students follow the food-service industry rules for personal cleanliness while preparing their muffins? Did students follow the recipe and were the mixing techniques used as to not over mix the muffin batter? After baking were the muffin tops slightly rounded, bumpy tops, and uniform in size? The color should be golden brown. The flavor is well-blended and the texture will be even grain, tender, and moist.
